It should not be confused with the white tripe sold in grocery stores for human consumption, which has been bleached and cleaned and has a very different nutritional profile.
Green tripe contains naturally occurring enzymes from the animal's stomach, as well as a balance of omega-3 and omega-6 fatty acids. It is also a good source of protein.
